Savor the aroma of Washington’s towering cedar trees and the taste of tender salmon in this dish.

Grilled Cedar Plank Salmon

Pairs well with Washington Chardonnay

Makes: 4-6 servings

Ingredients
  • Rectangular cedar plank, about 15” long
  • 2-4 lb. salmon filet
  • Juice from 1 large lemon
  • Chopped garlic clove
  • 1 tablespoon melted butter
  • ½ cup brown sugar
  • ½ teaspoon coarse black pepper
Directions
  1. Soak the cedar plank in water for two hours. Heat a grill on low. Meanwhile, combine melted butter, lemon juice, garlic and pepper.
  2. Brush cedar plank with olive oil, then carefully lay the salmon on the plank.
  3. Brush the salmon with the lemon-butter mixture, place the plank on the grill rack and sprinkle with brown sugar.
  4. Grill for about 20 minutes, basting with lemon-butter mixture every five minutes. (Have a spray bottle of water nearby; sometimes the flames will make the plank smoke and alter the flavor.) When salmon turns lighter pink and flaky, it’s ready.
