Pork Tenderloin with Figs, Garlic and Pinot Noir

Serves: 6

Ingredients
  • 3 lb. pork tenderloin
  • 1 cup dried Mission figs, cut in half lengthwise with
  • stems removed
  • ½ tablespoon sugar
  • ¼ teaspoon anise seeds
  • 2 tablespoons chopped fresh thyme leaves
  • 2 cups Pinot Noir, divided
  • 4 garlic cloves slivered
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
Directions
  1. Preheat oven to 350 degrees. Bring figs, sugar, anise, 1 tablespoon thyme and 1 cup wine to a boil in a medium saucepan. Simmer until figs are tender, then set aside to cool.
  2. Combine 1 tablespoon thyme, 1 teaspoon salt, ½ teaspoon pepper and oil, then rub all over pork. Make about 8 slits into the pork, and stuff a garlic sliver and fig into each one.
  3. Heat olive oil in a frying pan on medium-high until shimmering. Next, brown pork on all sides. Transfer pork to a rimmed baking pan. Add reserved garlic to frying pan and cook until golden.
  4. Bake pork at 350 degrees for 45 minutes or until thermometer registers 145 degrees in center. Pour pan juices in saucepan with fig mixture. Pour the other cup of wine in the pan and bring to a boil. Season with salt and pepper. Then serve on pork slices.
