RECIPE

Italian history comes baked into this dish. The ancient staple polenta is layered with tomato, mozzarella and basil, which are the colors of the Italian flag Queen Margherita wanted on her pizza.

Baked Polenta Margherita

Makes: 4 servings

Ingredients
  • 1 tube prepared polenta
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup grated Parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • ½ cup grated sharp cheddar cheese
  • 1 tablespoon coarsely chopped fresh basil
  • ¼ teaspoon nutmeg
  • Kosher salt and freshly ground pepper for seasoning
Directions
  1. Coat the bottom of a baking dish with non-stick cooking spray, then preheat oven to 350 degrees.
  2. Slice polenta in ¼” rounds. Place a layer of polenta into the baking dish, then add a layer of Mozzarella and cheddar. Repeat layer.
  3. Sprinkle basil, tomatoes, Mozzarella and Parmesan on top. Season with salt, pepper and nutmeg. Bake for 20-30 minutes until cheese is bubbly.
